Filing for a K-1 Visa after she came here as a friend on a B-1 / B-2 Visa, is this an issue?

Timeline

We had known each other (as friends) for over a year prior to her coming here. It was intended to be a trip that I would show her the USA being that she had never been here and we both enjoy traveling. What ended up happening was that we fell in love and are now trying to get the ball rolling on a K-1 Visa but we're not sure if because of how things transpired it will have an impact on anything. And while, or maybe even before, we file for the K-1, can she come here using the B-1 / B-2 Visa (of course telling the truth to the officer a the airport that she will be visiting her boyfriend/fiance and that we plan to do things the right way (K-1 Visa)?) And for the evidence we provide with the K-1 application, would it be a problem to use the photos, tickets, etc. from while she was here on the B-1 / B-2 Visa? And lastly, would one trip be sufficient to prove it's legitimate or would that raise a red flag? We have a trip to Cancun planned in September but we'd really like to get this going ASAP. She is from Mexico if that makes any difference. Thanks in advance!

What you are planning is absolutely fine.

It is normal and ok to meet people while they are on vacation, and fall in love :) and her visiting with the B2 while the process goes on should also be no problem, as long as she doesn;t overstay.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.

Well we have only officially been boyfriend/girlfriend since just after she arrived here. If we decide to file for a K-1 now, would that raise any flags being that we've only met in person once and it's been a short period of time since we were official?

A short relationship can be a red flag, but a decision on the visa won't be made until interview, and that is 6+ months away, so you can easily meet a couple more times, and talk a lot over email and on the phone to get to know eachother.

I was in a short relationship before filing K1. I met my fiance when I was on vacation here. On the interview date I provided 12lb of dating evidences. A huge photo album of us, 100 Skype pictures screenshot, almost everyday since we're far apart. 600 pages of chatting history. Plane ticket, Hotel confirmation, Parcel receipt, Card and many more. But I still got lots of question on the interview. Also tons of questions at the immigration that took me almost 30 minutes even I had K1 because the officer thought it was too fast (it was a year and two months after we dated.) I passed every just fine at the end.

My K1 visa journey △ ( My process took 90 days until the interview )

14 August 2015 : Mailed I-129F through USPS express service

02 September 2015 : Received NOA1 hard copy by mail.

05 October 2015 : Case number was assigned.

20 October 2015 : Packet 3 arrived in my hand.

03 November 2015 : Got Packet 4 e-mail from Bangkok embassy about the interview date.

18 November 2015 : Visa interview and it was approved!

20 November 2015 : Got documents and a passport with K1 Visa back in my hands

12 July 2016 : NOA1 for AP and EAD  / 14 July 2016 : NOA1 for AOS

26 July 2016 : Got Biometric letter

09 Aug 2016 : Biometric appointment

07 Oct 2016 : AOS case was approved. Without interview!!

13 Oct 2016 : card was mailed to me
