We've been approved by the NVC and my wife has her interview in August at the embassy in Vietnam.

We needed a joint sponsor so we got a married relative to help us out.

Their income dropped from the the previous year due to change in jobs.

they make enough together in 2015, but individually they don't. (I used a 1-864a last time and the husband made enough the wife didn't)

To be clear, they made enough jointly to be meet 125% poverty guidelines, but it was a drop from the previous year.

The husband has gotten a government job (federal government), the last 4 months.

What would you do in this situation?

1. just use the updated I-864/I-864a? for 2015

2. Bring pay slips for last 4 months showing steady income

according the embassy, all we need is updated AoS for 2015, they didn't ask for ANY income from 2016.

Thanks...hopefully this will be the last stressful thing we have to go through for this visa.

You need new and updated AOS from your JS and his wife.

Current income is what counts, so your JS needs to provide information about his current job. His payslips from the last 4 months will provide proof of his current income. His income from 2015 does not count since he no longer has that job.
