If it is just the two of you, and you still make the same income (it is current and ongoing income that counts the most) then yeah you should be fine.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.

Are you self-employed? They will go by line 22 of the 1040, which is Total Income after business deductions. If you are an employee, then it will be your gross current annual income.

I am partially self employed. Most of my money comes from self employment. The line 22 on my 1040 is under the 125% of poverty level. Should I get a cosponsor? I'm in Texas if that makes a difference. Does the K1 have less of a chance of working if I use a cosponsor and not just my own income?

With the self-employment income and income from your other source(s), the income is still below the requirement? If your current annual income from the other source(s) added in with the self-employment income meets the requirement, then you should be ok. You just need to show proof of the income.

If you need a co-sponsor, then you can use one. The co-sponsor needs to have enough for their own household size plus the foreign fiance(e). They fill out their own separate I-134 and provide the same supporting documents needed by the USC petitioner/sponsor.

I think I might be too low. Is there any negative of having a co-sponsor? Any horror stories of it making the interviewee less likely to get a visa? I want to play it safe by having the co-sponsor if it helps, but not if for some reason it makes me look "bad."

No, if you have the required financial sponsorship, through the petitioner/sponsor or co-sponsor, then the visa can be approved, if all other aspects of being granted the visa are also met.
