Our interview at the Seoul embassy is in a week and I just want to know what I need to submit to prove Domicile in the U.S. (or intent to re-establish it).

I have been living in Korea for almost 6 years as a teacher. My wife (from the Philippines) has lived here with me for about 2 years. I have just been renewing 1-year contracts all along, and have not renewed for a 7th year. I have maintained American bank accounts and investment accounts in my last address (my Mom's house). I send money from Korea to that account almost every month. That address has not changed. I have renewed my driver's license twice since moving here (using that address) and voted in the 2012 election (but don't know how to prove that). I repay my student loan every month and have been taking online classes at my previous university (Kent State) for the past 2 years. I have already enrolled for a regular course (classroom, not online) in the Fall of this year. I have also enrolled my stepdaughter (also coming with us) in a preschool in my town starting in September. We plan to live there with my Mom at first until we can find a new place.

Will we be okay? Is this enough evidence? How much of this should I submit documentation for?

Thanks for any help you all can provide! :)

To me this sounds like a nice amount of evidence. The NVC Process wiki has a section with examples of evidence and a sample letter. If you haven't seen it yet, it's worth a look.

Each embassy has its own level of strictness on domicile, so you might also want to look at reviews for Seoul or to search for Seoul and domicile to see if you can get an idea of how much evidence others have provided.
