I immigrated to US on a K-1 visa a few weeks ago, got my SSN shortly after. We are getting married in 10 days and then filing our AOS.

Since I am in K1 limbo I am a non-resident. We are trying to set up a joint bank account (checking/savings) and USAA requires a W-8 Ben.

Since I have my SSN if makes more sense to be to file a W-9, but since I am a non-resident I'm guessing the correct thing is to file a W-8 Ben then after I get my green card I provide a W-9?

Will this in any way affect the money coming in from my hubbys side (since I wont be working for quite some time) or will it just be taxation on the interest from the savings account? and will this impact my immigration process in any way?

No it wont affect your immigration process and wont affect your income taxes. I used the w8ben when I was in Canada with USAA and it took a month or two to change over to a w9 after I got my SSN after I moved. It wasn't on my hugh list of priorities obviously. We filed our taxes jointly just fine at thr end of 2013.

You'd have to have quite a bit in the account for decent amounts of time for the interest to be of any consequence.

Okay thx so technically i should be filing the W-9 since i already have my SSN? even if im still in a non-resident status on K1?

No i think you should do the w8ben and once you have proof of your legal status that they accept, do the w9 then. So either with the EAD or GC. I had to supply my green card with my w9.
