My SO told me he has selected someone to be the "godfather" at the wedding. Is a "godfather" the equivalent of a best man at an American wedding? What is the role of the "godfather?"

Yep...and the "godmother" would be the maid of honor :) And it would the same as in america, they should help and assist the groom and bride with the preparations and the wedding

For Catholic weddings, "godparents" are part of the wedding ceremony. Unlike american styled weddings' best man and maid of honor, they promise to help guide the new couple.

Actually we have different types of godparents. The birth godparents, when you have a child you choose the godmother and godfather for baptism (not everybody has one as not everybody is baptized) and the wedding godmother and godfather, usually the couple's best friend, sometimes family member. It's different types of godparenting :P

I am not familiar with the OPs situation. Just wanted to point out there can be a significat difference between bet man and godfather at weddings.
