Heard many stories of lawyers messing up and doing more damage than good.

If you're organized, you can read and research the guides, and follow the fairly simple process yourself. I suggest using a PC or laptop not your phone reading all the guides reading ahead of time knowing what you need.

My friend started the K-1 process with an attorney she ended up firing him and just finishing the rest on her own using the help here.

Unless you have some extremely difficult case you should be just fine on your own.

May 3, 2011: Received NOA1 hardcopy in mail
July 26, 2011: Received NOA2 via text/email!!!
July 30, 2011: Received NOA2 hardcopy in mail
August 8, 2011: NVC received file
September 1, 2011: NVC case number assigned
September 2, 2011: AOS invoice received, OPTIN email for EP sent
September 7, 2011: Paid AOS bill (payment portal showed PAID on September 9, 2011)
September 8, 2011: OPTIN email accepted, GZO number assigned
September 10, 2011: Emailed AOS package
September 12, 2011: IV bill invoiced
September 13, 2011: Paid IV bill (payment portal showed PAID on September 14, 2011)
September 14, 2011: Emailed IV package
October 3, 2011: Emailed checklist response (checklist generated due to typo on Form DS-230)
October 6, 2011: Case complete at NVC
November 10, 2011: Interview - APPROVED!!!
December 7, 2011: POE - Sea-Tac Airport

September 17, 2013: Mailed I-751 to CSC

September 23, 2013: Received NOA1 in mail (receipt date September 19th)

October 16, 2013: Biometrics Appointment

January 28, 2014: Production of new Green Card ordered

February 3, 2014: New Green Card received; done with USCIS until fall of 2023*

December 18, 2023:  Filed I-90 to renew Green Card

December 21, 2023:  Production of new Green Card ordered - will be seeing USCIS again every 10 years for renewal

Even if you hire a lawyer you still need to do most of the work yourself. It's really not that hard when you follow the guides in this forum, so for us it would definitely not be worth paying a lawyer for the K-1.

A lawyer is a total waste of time or money except if you have some huge issues (previous removal/ban from the US, criminal charges etc).

If it isn't difficult, it isn't worth it.

For Ireland if you haven't any red flags it is just as well to do it on your own. The process really is straightforward and the guides here tell you what you need to know. We used a lawyer and our circumstance made a lawyer worth it, but most likely yours does not.

Thank you all for giving your opinions!

Yes, I think we'd be safe to do the process without a lawyer. We are the same age. No criminal records or prior marriages. We've been together 2 years and we've visited each other 3 times in total. My only worry is our financial state. We are both currently unemployed but seeking work. He is having more luck than me and is likely to be well employed by the time the embassy interview comes around. He found an immigration lawyer who mentioned we needing to go down the co-sponsor route. Would that be lawyer worthy or have people managed just fine doing the process that way just fine?

Nope, using a co-sponsor is very common and not lawyer-worthy.

If it isn't difficult, it isn't worth it.
