I have just found out while preparing the K1 forms for my fiancé that her name is misspelled on her official birth certificate. Her family name starts with an F and its spelled with a P...

She has has a passport in the past and instead of fixing the BC she got the passport in the name that was on the BC. That passport just expired. She says she can go get it fixed and get an notice attached to it and get it notorized of the misspelling and linking to her parents names. At lesast that's as much as I can understand of it... I have heard horror stories of taking years and tons of pasos to get a misspelling on a BC fixed.

IS the fix she is talking about good enough for the US consulate? what are my options here?

Yes she can get her BC corrected, it is not complicated, just takes a few months. I do suggest this get completed so there are no issues later on.

She will start this process of name correction at the local registry where she was born, they will forward the correction to PSA (NSO).

Then she can get her passport in her correct name also.

Or........ go through life using the name as shown on the BC

For the I-129F now use her CORRECT name if she is going to change her birth certificate.
