Do we need a joint sponsor in this situation?

My husband is a US Citizen and I'm a Mexican Citizen currently on STEM Extension. We are trying to file AOS, we met in college and have been together for the past 6 years and married a year ago.

Background for our jobs. I am a Safety Coordinator. I have been working on the same company for the past year and my earnings are well above the poverty line. My husband is currently unemployed, by choice, since January 2016 preparing to pursue a farming career. He has a degree as a Registered Nurse and worked as a Registered Nurse in 2015 earning also well above poverty line. He spent 2014 doing an apprenticeship in the farming field (showed no income on taxes) and in 2013 he was working as a Registered Nurse. He did file taxes all 3 years. In 2015 we filed a joint tax return.

Our question is this:

Do we need a joint sponsor? His father has volunteered to joint sponsor if we need it.

Can my husband serve as the only sponsor even though he is not working this year (he will have to check "unemployed" on form I-864) but has showed sufficient income in previous tax years?

You can file if your income is above the 125% level and in your case you are going to continue to work for the same company and have been working there for the past year. No joint sponsor needed.

He cannot be the solo sponsor by himself since he is currently unemployed, his past incomes don't count in this case. However he can include your income in his i864 to make the annual income well above the poverty line. You will need some sort of evidence in writing from your employer that you will continue to receive the same or more salary after getting the GC.

Or

He can have his father as a joint sponsor.

If we use his father as the joint sponsor, does his mother have to fill something out as well? I thought I read that somewhere. So confusing!
