It really depends on your country. Every country sort of has its own rules. If you post your country or set it in your profile, people will be able to assist you much better. There are also region specific sections here on the forums that you should check out.

In Germany for example, you have to pay a fee and submit all documents requested from the consulate. After they've accepted the documents, you can schedule your own appointment. They don't pick it for you. You can wait for a while or pick the first available appointment, up to you. Your country might have a completely different process though.

Restrictions to Changing Appointments

Please be reminded that even though nonimmigrant visa fees are valid for one calendar year, options to schedule an appointment are limited. The U.S. Embassy in Manila schedules hundreds of thousands of nonimmigrant visa appointments each year and must accommodate requests both for new appointments and for those applicants who need to reschedule their appointments for whatever reason. Applicants are only allowed to reschedule twice (not including the initial appointment) without penalty. If the second rescheduling attempt is canceled, an applicant will only be allowed to reschedule a new date after a waiting period of 90 days. Please plan your visa application accordingly to avoid problems securing an interview appointment

Correct your timeline it states - Armenia for country

You DO NOT need to email the embassy. Did you schedule your interview online or call? Then simple log onto your account/profile and cancel the current appointment, then when ready schedule your new appointment.

You can only cancel/reschedule twice without penalty.
