have EAD, received tentative job offer, scared that it will be rescinded, can i take a volunteer position as well just in case?

Hi there, if this is the wrong sub forum for this question please let me know and I will repost.

I am on an F-1 and received my EAD card. The latest date for me to start working is May 17 2016.

I received a job offer and was to start on April 11, however, they called me today and told me that my urine sample for my drug test was too dilute, and I have to go give another sample. The problem is that by the time they process a new urine sample, I will have missed this months orientation/start date of April 11, and will have to start on May 11.

I am worried that they may rescind the offer/hire someone else in the meantime? I am probably just being really paranoid, but in order to be safe I was thinking of applying for a volunteer position, so that at least i have something to meet the minimum by May 17 2016.

Questions:

Should I just send in my offer of employment for this job to USCIS now?

Should I wait, and then send in an offer for volunteer work, and then send in the offer of employment after I am sure that I will be working?

Can I both volunteer and work? or only one or the other?

yes EAD is through OPT

No I'm not concerned about the drug test, I just drank too much water the day of.
