I am currently a student on F-1 Visa, I got engaged to a US citizen last week, we are both students in the same university, we also obtained the official marriage certificate, however, we are not living together now (I live off-campus and she lives on-campus) and we will not be living together until the wedding ceremony since this is the tradition. We are planning to have our wedding in December in my home country (Jordan). is there any risk if I travel to Jordan without adjusting status? and if I start my status adjustment now is it going to work?

Will you be entering the US on your F-1 after getting married, or will that no longer be valid at that time? If your F-1 is still valid, I think you'll be okay to enter after getting married. If the F-1 is not valid than you will need to apply for a tourist visa and you may incur problems upon entry being married to a USC. They may deny you entry and tell you to apply for a marriage visa.
