IF you don't have the green card you will definitely need a visa, the problem is when you try to come back to US, you have no proof that you are a permanent residence, my advise is to reschedule the trip until you get your green card.

The endorsed CR1 visa should be proof enough for returning to the US as that is her temporary green card. I'm just not sure if the Canadians treat it the same. I'd contact the relevant Canadian consulate to find out for sure.

The day you enetered the US with your visa you became a permanent resident of the US. Canada allows US permanent residents to visit without a visa. You should be ok to travel to canada even though you don't have your plastic card. but the visa is a temporary green card.

Some will require an ETA if they are flying; but green card or i-551 is sufficient for land entry

Permanent residents of the US can enter Canada with their national passport and their green card.
