We have just starting the whole process. My husband is American and I am British. We live in Saudi Arabia. Im trying to get informed how it all works but Im starting to get confused.

We had to send our I-130 to the Chicago Lockbox as the US Embassy in Riyadh now only accept Refugee applications. In turn we were advised that our documents were being reviewed in Nebraska.

On reading various websites am I correct in saying that when everything is approved (fingers crossed) I will have to go for interview and medical exam the USCIS office that is handling Middle East application - in this case ATHENS? Has anyone gone through this recently?

No, no. Medical is at a consulate appointed doctor. Interview will be at the U.S. Embassy in Riyadh.

The U.S. embassy isn't accepting petitions but, they are still interviewing people for visas.

You have not filed via DCF, you have filed via the lockbox-the process most filers use. Athens will have nothing to do with your petition. After it is approved in Nebraska, it will be sent to the National Visa Center (NVC). Read the guides on this site using a computer to understand the NVC process. After your case is finished there, it will be sent to Riyadh and you will have your medical in Saudi and your visa interview there as well. I am assuming you are legally residing in Saudi Arabia.
