I-864 and inheritance

My husband does not earn enough on his own to sponsor me so we were all set with a joint sponsor who is a good friend of ours.

However, at the beginning of this month my husband's stepmother died and we have been informed that she left a will with a sizeable chunk being left to my husband. With this amount of money we no longer need the joint sponsor but I am concerned. I am aware that large sums of money being deposited into a bank account just before the I-864 is filed arouse suspicion. We have the death certificate and a copy of the will to show the amount my husband received and also the check is from the executor who is named in the will.

Is the inheritance likely to cause a problem? Should we continue with plan A and use the joint sponsor and make no reference to this sum of money?

No it would not. Technically you may use it as an Asset

You have strong evidence that your parents aren't paying him off to bring you to America. That might be the suspicion of a large amount of money suddenly appearing.
