Do they still charge your $340 check

I don't think NOA1 gets denied. If anything, the decision making occurs at the NOA-2 stage. Why are you concerned with denials? If everything is legit, these things don't usually get denied. Visas get denied at the interview stage often but petitions are usually accepted.

Everything is legit im just nervous as much as everybody else that filed the petition that's why im asking these questions thank you though

You need to read the guides so you know what's going on. You usually get NOA1 the same day or next day so today or early next week as the have cashed the check.

No if there was an issue they would have sent it back and not sent you an NOA1. That doesnt mean that your petition will be RFE free or approved, just that you likely sent all the basics and signed all the dotted lines.

Timeline

They will still charge you even if you get denied. The fact that they cashed the check only means you sent them the correct amount and they accepted your application. Now you have to wait and see if you'll be approved or denied.
