K1 Visa setting up interview online

Timeline

I've recently submitted the DS-160 form and got a reply saying I now need to setup a visa/medical interview.

I created a user on the website they provided and am now asked to choose which service I need between 4 options.

The two options I'm not unsure between are

"I have received a letter from the consular section with instructions to schedule an appointment."

and

"I need to schedule a K Visa (fiance or spouse/child) appointment"

I'm assuming I need to schedule a K Visa appointment? But in the email they also attached a Packet 4 Letter.doc which is telling me to schedule my interview and medical so I wasn't sure if that's considered a letter from the consular?

Yes you need a K visa appointment. You did not have an interview scheduled for you by the consular section or NVC.

When I go to select the date of the appointment for the interview, I'm only given 1 available date as an option...is there a reason I only have 1 day to select?

I'm not sure if this specific date will be able to work for me and even 1 or 2 weeks later would be perfect. Any ideas?

You can wait. They often open up more appointments as time goes on. Sometimes with either consulate though, you will run into dry spells where there are no appointments available at all. They automatically extend your NOA2 however in this case. Even if you pick that date, you can go in later and change it if something opens up if you want to be on the safe side?
