A cover letter explaining your xo-mingling timeframe is certainly helpful. Many of us cannot actually add our spouses to joint assets until they physically get here. Explain what you did BEFORE POE, and then show that you added other things AFTER POE.

My spouse is not on my house deed, since I bought our home 7 years before I met her. I will explain this in a cover letter.

This question comes up a lot- Should I include an explanation/cover letter> ?

The answer is to use common sense. If there is something that needs to be explained- explain it~! Remember the person getting your packet is looking at it from scratch. They dont know you, your spouse, or anything about the way you live or what youve been through/doing. If the evidence is self explanatory then it doesnt need additional explanations. If there are gaps or anything that could be considered 'odd' or not the norm then explain why it is what it is.

Yes typically there is not an abundance of evidence prior to POE. But there is evidence in a CR case, you used it to get the visa remember? Its definitely okay to include it again as well as a statement outlining what you have.
