Finally and after 5 years together we have decided to be together in the states and get married after Visa approval. We are processing the K1/K2 petition and all required documents as we speak. I am 60 yrs young and she is 40 yrs young. If the petition approved and she is to go for interview in Singapore where she is residing and working, would it be a good idea to fly to SG and be on her side during the interview, would it help in expediting the visa process? Also, she has one boy age 12 living in the Philippines and from my understanding that kids under 14 are not required to be present, but I hear from other applicants where they were asked to have the kids present even under the age of 14. Does she have to call the embassy to find out ahead of the interview at least to have he son fly to Singapore? Any comments or suggestions?

No, just helps with visa approval.

Is this better than visiting your fiance (for 2nd visit) prior to the interview (in between the NOA1 and interview date)?

Some embassy allows (requires) the US petitioner to attend the interview, and can give further legitimacy of your relationship. This can also provide your fiancé moral support.

I attended my wife's interview, but it was not required. She wanted me there, and I was able to talk/answer the CO questions during the interview process. Whether it is better or not, I can only answer in behave of my wife and it is an adamant yes to both visiting her multiple times and the interview.
