Bizarre situation that I have not seen covered.

We submitted the I-485 application, and then received a request for more evidence, including a new I-864 (Proof of financial support). Between submitting the I-485 and now, I changed my job, hated my new job and quit.

I feel pretty confident[and some interesting pressure] that I can find a new job within the ~80 days we have to resubmit these documents, but, will job changes cause a problem? I should put the new job on the new I-485, right?

Also, what it I by chance don't find a job within 80 days? would be adding a co-sponsor be OK to do during the request for evidence?

Yes you need to update all forms with your new job (or lack of a job), and yes you can add a co-sponsor.

Whether the job changes cause a problem will depend... they may think your financial situation is unreliable, to have three jobs within a few months. But if they jobs are all comfortably above the poverty line, and you have some assets )savings, 2nd car etc) to back that up with, you'll likely be ok.
