I got married in December my wife doesn't work so my mother's will be my sponsor. Do I need to fill in two i864 applications.??

Or just do on joint one ?

two, the petitioner is always the main sponsor, so she will file the i864 as sponsor, your mom will be the only joint sponsor

your wife must attach a letter stating why she doesn't need to file taxes if she hasn't

if you are the beneficiary, you don't fill out anything

now if you are the petitioner and you are filing for your wife, then you will fill out the i864 as sponsor and your mom another i864 as your joint sponsor
