How long do they mail the interview letter after your status changes?

Last month (December) I randomly decided to check our case status for our AOS from K1 and it said that on November 30th they mailed a letter with an interview date & time. It was around a month after that date & we had never received the letter. So I went online & did one of the infopass things (I guess thats what it's called) for a letter that was not received & they said I would receive a response by January 22nd. That's today & still no letter or any response. Is there a gap between a status change & when they actually mail the letter for the interview? I know the letter will predate the interview by 6 weeks so if there isn't anything available for a while could that be why we haven't gotten a letter? Our biggest issue is I am 9 months pregnant & will be having our baby in the next 3 weeks. We obviously need the interview to be well after that. Also, I didn't send the medical form with my husband's AOS paperwork because I knew he needed vaccinations. I was going to wait for the RFE & get it all done then. We never got a RFE. So I don't know if that's something we will also need to do before the interview or not.

04/29/2014- Personal Check cashed, electronic NOA1: routed to Texas Service Center

05/01/2014- Received NOA1 hardcopy, Alien Registration # changed

08/08/2014- Text & email saying we were transferred to another center (from TSC to CSC)

09/22/2014- Received electronic NOA2 dated 9/19/2014

12/16/2014- Medical Exam

12/17/2014- Interview: APPROVED

01/17/2015- POE-Houston

03/07/2015- Got married!

03/26/2015- Mailed off Adjustment of Status, Employment Authorization Document & Advanced Parole

04/06/2015- Personal Check cashed, electronic NOA1 for all three

04/13/2015- Received NOA1 hardcopies for all three dated 4/3/2015
04/18/2015- Received NOA for biometrics appointment dated 4/10/2015

04/28/2015- Biometrics appointment in Houston

Normally it´s about a week after case is done, that they email the date.

But if there is no times, then they will not mail you before there is one.

Did you look at CEAC and see the status ?

No, I used uscis.gov and it says:

"Case Is Ready To Be Scheduled For An Interview

As of November 30, 2015, we are ready to schedule your Form I-485, Application to Register Permanent Residence or to Adjust Status, Receipt Number MSC**********, for an interview. We will schedule your interview and send you a notice. Please follow any instructions in the notice. If you move, go to www.uscis.gov/addresschange to give us your new mailing address."

04/23/2014- Mailed I-129F petition

04/29/2014- Personal Check cashed, electronic NOA1: routed to Texas Service Center

06-11-2007 = NOA1 date (unknown to me).

07-20-2007 = Phoned Immigration Officer; got WAC#; where's NOA1?

09-25-2007 = Touch (first-ever).

09-28-2007 = NOA1, 23 days after their 45-day promise to send it (grrrr).

10-20 & 11-14-2007 = Phoned ImmOffs; "still pending."

12-11-2007 = 180 days; file is "between workstations, may be early Jan."; touches 12/11 & 12/12.

12-18-2007 = Call; file is with Division 9 ofcr. (bckgrnd check); e-prompt to shake it; touch.

12-19-2007 = NOA2 by e-mail & web, dated 12-18-07 (187 days; 201 per VJ); in mail 12/24/07.

01-09-2008 = File from USCIS to NVC, 1-4-08; NVC creates file, 1/15/08; to consulate 1/16/08.

01-23-2008 = Consulate gets file; outdated Packet 4 mailed to fiancee 1/27/08; rec'd 3/3/08.

04-29-2008 = Fiancee's 4-min. consular interview, 8:30 a.m.; much evidence brought but not allowed to be presented (consul: "More proof! Second interview! Bring your fiance!").

05-05-2008 = Infuriating $12 call to non-English-speaking consulate appointment-setter.

05-06-2008 = Better $12 call to English-speaker; "joint" interview date 6/30/08 (my selection).

06-30-2008 = Stokes Interrogations w/Ecuadorian (not USC); "wait 2 weeks; we'll mail her."

07-2008 = Daily calls to DOS: "currently processing"; 8/05 = Phoned consulate, got Section Chief; wrote him.

08-07-08 = E-mail from consulate, promising to issue visa "as soon as we get her passport" (on 8/12, per DHL).

08-27-08 = Phoned consulate (they "couldn't find" our file); visa DHL'd 8/28; in hand 9/1; through POE on 10/9 with NO hassles(!).

Can anyone provide some insight into when they mail the letter?
