My Fiance is applying with the Ho Chi Minh City consulate which is known for being strict and unforgiving.

My fiance and I have tons of evidence, we have lived together here in Vietnam for nearly 2 years now. We have passport stamps from vacations together, pictures (with both her family and my own), shared bills, etc... So I am not terribly worried about the evidence.

However...

My situation is tricky because all my savings and my income is here in Vietnam. I will be transferring my savings to the US soon (its all legal money) it should amount to roughly 30,000 dollars... maybe a little more maybe a little less.

My gross salary for 2015 was around 27,000 dollars here in Vietnam. I have every payslip, several letters from my employer (labor contract, contract completion bonus, terms of contract agreement) and I will try to get a bank statement here in Vietnam to that effect (If I can, the banking system here is a mess).

Here it gets complicated...

My labor contract expires soon in LATE APRIL, and since we are planning to leave to the US I will not be renewing it. I will stop working for my company here around early MARCH in anticipation of our interview and departure to the US. Will this pose a significant problem during the interview (because this seems to be the natural next step for us anyway)?

For the 2015 tax year I was OK, well above the poverty line and have ample evidence to show. But during the interview (no date yet) I will NOT be employed anymore. Will the proof that I was earning income prior to the interview be sufficient for the consulate or will they see me as unemployed with no income at all? If that is the case what should we do? Is it best to find a co-sponsor, or should I try to find a job that will agree to hire me once I am back in the US?

Should I file a i-134 or i-184 with a co-sponsor?

I-134 is used to suppport the K1 petition. You will need assets (cash, stocks, real estate, etc.) that are 3 times the income shortfall to qualify on your own. Your continuing income will be zero as you won't be working in the same job back in the US. If you have a job (not an offer) in the US paying you an annual salary that meets the requirement then you are ok. If not, you need a joint sponsor.

HCMC has not always been easy with joint sponsors. They tend to like someone that is a close family member. That person also completes the I-134 and submits all the needed documentation.

You think my father co-sponsering us would be looked at favorable? He has met her twice and will meet her again soon actually so he knows our relationship etc...

photos together, his visa stamps and airplane tickets to the region etc

Dad as a joint sponsor is good. They are more likely to accept an immediate family member.

It's not important to show that they know each other. You do want to send evidence of your relation to dad (copy of your birth certificate).
