Can give you the signed I-134 now, but should send you copies of recent evidence of their current income right before the interview. Also, if they file their 2015 taxes before the interview, then they should provide a copy of that recent tax return too.

If her income meets the requirement, then no need for bank statements or to list assets on the form at all. She can go ahead and get the letter from employer, if her income will not be changing before the interview, and then just send you copies of her recent pay stubs she receives near the interview date.

If she has income she needs to prove through bank statements, then she should send the last 6 months worth right before the interview.

Yes, just have them email you a few copies of their pay summaries closer to the interview to show that they are still employed and earning the income.

My employer letter was dated in July and my 134 was dated in August (for an anticipated September interview that had to be delayed until November. I merely sent more recent pay summaries then and we had no issues.

Are recent pay stubs and last year's tax return good enough? Also my tax return is like 72 pages long do I need that whole thing or is there just a smaller section I can give them?

You can get an IRS transcript instead. You can get it in person at an IRS office, by mail through ordering online, or in the FAQ section of the IRS transcript ordering site, there is a number you can call to order as well. https://www.irs.gov/Individuals/Get-Transcript
