Does an offer letter count as meeting income for k1 visa if it's above the required poverty limit ?

I didn't meet the limit last year, but definitely this year astronomically with my new job and I'm wondering if i do I need to save 16000 to 20,000 in my bank statements for my fiancée to show during the interview process just to be safe

No, an offer letter isn't good evidence. Recent paystubs and an employer letter are good evidence. If it's a new job, just submit what you have and bring more to the interview.

Since the first time you will submit the I-134 will be at the interview, you will need to show proof of the income then. The job offer alone probably will not be enough, so it would be better if you had already started working and had a letter from your employer and recent pay stubs to show. Thank. You very much kaydeecee and Anh for taking the time to reply and send me very pertinent info!

I'm more worried because I didn't make that much last year and I was just a student but now I make a 90k salary but just started working as a month ago but have an offer letter from the company and two recent pay stubs!

Would that meet the requirements or the absolutely need to see 16000 in the bank statement or 16000 already made the year of applying and or before the interview !?

Also as an added feature . Would you recommend I add someone else under the affirmative of support ? I know my brother would be willing to help in any way and has a decent income as well as a pharmacist ?

I'm just worried I made less than the 100 % poverty line last year on my taxes because I was a student and didn't work much and that may put a dent to our visa process !

We've been dating 4 years now and it's been back and forth traveling for me especially and meeting in other countries because she couldn't come back into the USA and would like all of this to come to an end and be married and live a happy life together ! I've gotten tired of planes, border diplomacies and the nonstop Skype good byes ? thanks for your answers and help

It should not matter that you did not meet the requirement last year. It should be based on your current annual income, which is way more than enough. You will be putting your income as $90k on your I-134. If you wish, you can include a statement about being a student last year and now that you are out of school, you have your career going and make well above the required amount. Provide as much proof of your income as you can. Use a copy of the job offer and as many recent pay stubs as you have before the interview. Put those documents on top of your tax info, so they see them first as they look at your paperwork. The current income should be prominent and most important.
