My fiance (American citizen) have to provide me with the Form I-134 so I can bring it with me to the interview.
My question is, should I bring with me to the interview some documentation related to my financial situation too? A checking account balance, pay stubs, saving account balances?

No, the immigrant's finances are not evaluated. Be sure to have all the supporting documentation / evidence needed for the I-134.

I get the idea somewhere that i could provide info related to my financial situation, but maybe I'm just confuse because I don't remember where I see that anyway.

If you have substantial amounts of money or an ongoing income in your home country that would continue while you were in the US, you can try to have them consider it, but they have 100% right to deny even looking at it. If they bother looking at it, it's simply because they were feeling nice.
