Until you file for Adjustment of Status you are pretty much in a limbo. Of course you are still legal but you cannot work or travel outside the US (you can travel but you cannot reenty without an advanced parole or greencard).

I stronglu suggest you to apply for your greencard asap and also apply for your works permit and travel permit (the fee for the permits is waive because you are already submiting a gc petition).

The permits arrives fairly quick and you can go and get your SSN, drivers license, work and travel while you wait for your conditional greencard.

You remain a K-1 visa holder. Marriage did not change your visa to a CR-1 spousal visa.

When you file for AOS, you remain a K-1 with a pending adjustment. This allows you to stay in the US after 90 days on the K-1. Your status would be K-1 visa holder with pending AOS.

When you get your green card, you change from K-1 visa holder to green card holder (permanent resident).

Not sure what you mean by "what category". The categry you will immigrate under is Immediate Relative, as spouse of a US citizen. The specific category code on your green card when you get approved will be CR6 (conditional permanent resident, IR category, got it through Adjustment of Status).

After their I-94 has expired but before a K-1 has filed for AoS they are considered illegally present in the US, are overstaying, and could be detained by ICE.

Getting married does not change this.
