Careful here. You are asking about the interview at your Embassy/Consulate. I would recommend you find out what the Embassy/Consulate requires as each is different. Just because someone from India only needed 2014's tax return, you may be asked for all 3 years. They also want to see a COMPLETE tax return--all schedules and W-2s--whereas a tax transcript is what was filed with the IRS and is a complete tax return by itself.

Tax transcripts are easy to get and it is better. Order for three years ( need during adjustment process), but for KI-2014 is only needed.

IRS tax transcripts are not required for AOS(complete copy of return works as well), and only the most recent tax return or transcript is required to be sent with the I-864. So no, do not need the last 3 years for AOS.

Also, people should follow their consulate's instructions when interviewing for the K-1. Different consulates may require different supporting documents. For instance, some do not even require a tax return at all for the I-134. It will depend on where you are interviewing.
