I received a Letter of Employment from my employer dated Sept 1.

When everything was all said and done, the interview date my fiancee was able to get is Nov. 5th.

How long is the I-134 Letter of Employment valid for?

Will I have to ask my employer for a new letter with a new date or could I still use this Sept 1 letter?

There is no specific answer to your question, as there is no specific validity period. The best policy is to have your evidence of current income be as fresh as possible. My preference is to use a recent pay stub, instead of the employer letter. It's actually going to be more current, and is preferred by Consular Officers, over employer letters that are more easily faked.

My advice. Email your fiancee a scan of your most recent pay stub, just before the interview, so it can be printed and presented with the I-134 on interview day.
