W2s dont have any signature?

1040, you could provide the tax transcripts which you used to be able to order online, supposedly ordering via the automated phone system still works

Its been a long time since I filed physically but tax forms are signed and sent physically or electronically and not returned to you. So I dont think they could want the originals since you wont have them possibly...if you did electronically. So I can't imagine this is a big deal.

Get a copy of the Embassy Letter and follow it as a checklist for the interview. The documents listed are the only documents that are required. Here is what it says in answer to your question about taxes and evidence of support.

EVIDENCE OF SUPPORT. You should be able to demonstrate that you will not become a public charge or burden on the U.S. taxpayers for financial support. A completed I-134 Affidavit of Support Form may be useful to the consular officer to evaluate your petitioner’s ability to be financially responsible for you. You may also be asked to submit your petitioner’s most recent U.S. Federal income tax return (Form 1040) and wage statements (Form W-2). Employment letters stating salaries and bank statements may be included to substantiate the I-134. Download Form I-134 at http://www.uscis.gov/portal/site/uscis.

They are not asking for anything other than a copy of your 1040 and W2's. Copies are fine. If you do not have a physical copy then go to IRS website and request a copy. You can get a transcript online or by mail to view your tax account transactions, line-by-line tax return information or wage and income reported to the IRS for a specific tax year.

As mention you are not going to get a w-2 with signature the W-2 is a form that an employer is required to send to the IRS each year for each employee reporting their wages

You could get a tax transcript and just take that with you to the interview

Copies are fine, have your fiance sign a copy of the 1040 then email it and the W-2 to you.
