The most important supporting evidence you need with the I-129F petition is proof of having met in person within the 2 years prior to filing. Photos alone will not be enough for that. Things such as boarding passes, train passes, hotel/ATM receipts, bank/credit card statements, and passport stamps work well.

Once you enter the USA, via a K-1 visa, it is a one time entry, only.

When you get your AP card you can travel freely, as I understand this process.

Got the I-797C form in on September 30th and it is being routed to the California Service Center. Now we wait!

You should read the site suggected above including all the instructions to I-129F. The USCIS website has all the updated forms and guidelines to fill out the required forms.

The VJ guide is very efficient but also go to the USCIS website for a more updated forms to use and read the guidelines. Updated fees and where to send is also in the site. Using an old form can cause RFE or rejection of your petition.

When you apply for an AOS from fiancé to permanent residence, while it is in the process can I leave the USA and go back and fourth to visit?

Yes, but only after you receive your Advance Parole document. You will apply for Advance Parole as part of your AOS application package and can expect to receive your AP card in 60-90 days.

If you travel outside the US without Advance Parole, you will be considered to have abandoned your application for adjustment and would have to file for a CR-1 visa instead, which would mean you'd have to stay in your home country until the CR-1 process was complete. Even if your reason for traveling was an emergency. (For genuine family emergencies, there is Emergency Advance Parole, but that's outside the scope of your question.)
