nervous if there are enough documents for 134 affidavit, what happens if not?

Timeline

I am self employed and only make $20,000 per year. I submitted COPIES of a few pages of my taxes for the last two years. I only copied the pages that showed my income. Along with it, I submitted a personal statement saying that I am self employed, I only work part time, and at any instant upon my will I can start working extra days to double my income. I also submitted a statement from my bank saying how long my account has been open and that in the last 12 months I have deposited $34,000, and that my current balance is $10,000. Of course I also included the affidavit form filled out.

I didn't think that would be enough so I also got a co-sponsor. He makes $130,000 per year. I included the filled out and signed affidavit, a copy of his birth certificate, a letter from his HR department saying he has been employed for 10 years and makes over $100,000 per year. I also included 2 pay stubs. I also sent a personal statement from the co-sponsor saying how he is happy to support my fiancee in any way and he's like family and blah blah blah. I did not include copies of his taxes.

Do you guys think that this will be oaky?

I am really worried about this step.

Also, I am wondering what happens if they need any kind of more information at his interview, regarding anything? Does he have to schedule a new interview or can we just mail it to them? How much does this post pone the process? He has to fly to the embassy so it would really be an inconvenience if he needs to attend another interview later on.
