The embassy got package3, 17 Days passed, but no email notification for interview appointment,

We sent package 3 to the Embassy, they got it in 24 h . We check our status at CEAC. and it is updated in Aug.31, and again in Sep.1. But still we haven't receive any email from embassy for instruction to schedule Appointment for visa interview.

NOA 2 approved => June 5

And our case is valid till October 4.

How much should we wait before writing email to the Embassy.

Not sure when you sent packet 3, but the embassy will extend your K-1 petition. Don't worry about it expiring or lapsing; you're good. I would suggest giving it another week before contacting them if you have gotten updates. Remember that this coming Monday is a US holiday, so things may slow down for a day or two.

We mail package 3 in Aug 17. Embassy accepted in Aug. 18.

But what I worry is that we got the email instruction for package 3 in July 14, but didn't sent the doc directly because needed time for some documents from my fince.

Yeah, next week will be the 4 week mark for you. I don't think getting the documents there later is an issue. If they have updated it recently, they have looked at your case and are probably deciding if your documents are complete enough for the interview. You may get the packet 4 this weekend.
