I already submitted my uncle's DS-160 (for B1/B2 visa) with a particular date (X) as 'Intended Date of Arrival'. But I am unable to get a visa appointment before that date. So, should I submit the DS-160 again? or is it okay they can correct it at embassy ?

If uncle still wants to come, get the earliest appt date and explain the discrepancy at interview.

Sounds like uncle got a late start on the visa process.
