I am a bit confused. What happens after NVC assigns a case number? I already called and got my case number. I was reading in other posts that we are supposed to give NVC our email address after they assign the case number, is this true? Most of the posts were from awhile ago though. If anyone can help it will be greatly appreciated.

Keep checking your case number on this site: https://ceac.state.gov/ceac/

If you just got it assigned, it can take 2-5 days for the account to come up. Click on "Check My Visa Application Status" and it will give you messages as to the status. There's only a few, but you can see the progression on my signature below.

After the case says "Ready", you can complete "DS-160, Online Nonimmigrant Visa Application" and you will get an AA#. At this point, check your embassy page. You may need to access another system to get your appointment scheduled, wait for the embassy to contact you, or you may need to contact them. The AA# is just used to track the DS-160 to your case. You may use it during scheduling, but you'll mostly use your NVC case number.
