No you can't. Your original post said you had not moved yet. My fault for not noticing the dates throughout the thread.

File the petition now. If it gets approved faster than you had planned, then just delay the visa interview until you can produce enough solid evidence of current income. A few months should work, especially if you are well above the 125% level.
