Travel between biometrics and interview?

Would it be okay if needed to travel after fingerprints are taken but before the interview is?

Of course we don't know the date yet of the interview but just be back in a safe time before when the interview date might be judging by the timelines others have posted.

Yes it is fine. At the interview bring your passport and inform the officer that you need to amend your travel history.
