I am currently studying in the United States so I will not be able go back to my home country for the visa interview. I just want to ask if it is possible to reschedule the interview date to a specific date (or at least 2-3 months later)? If so, is it safe to do so. Thank you.

If you maintain F1 status until your priority date comes, you will be able to ask for an interview in the States.

Are you saying about Adjustment of Status cause that the only way I know of to have an interview in the US. I am currently going with Consular Processing and they told me that I must fly back to my home country. For your information, my PD will be current next month (September). I am expecting an interview letter in about 2-4 weeks but my classes are starting next week.
