So my wife received her ead card and our adjustment of status is pending whats next?? I see the EAD is only good for 1 year so what happens??

need ssn? take ead, wife, kids, 2 poodles (optional) into SSA office, fill out SSA-5 form, give to SSA worker.

if no greencard a year later, apply for ead renewal, fee is waived when submitting I-485 receipt notice copy.

did you

register your receipt numbers with the uscis status web portal thingie ? yes? no? if no, why no? [and no, poodle hair stuck in keyboard is not any acceptable answer]
