So my weekend has been made . A week later and we received our biometrics appointments. One is August 3rd and the other August 7th . I'm so happy !

I'm curious as to why I got 2 separate dates for biometrics instead of one

It doesn't really matter. Maybe they messed up something. When you go do your fingerprints and photo just inform them or ask about this, You won't need to come in twice.
