My fiance is $50 short of the minimum amount needed to sponsor, however he has a 25k life insurance. Would mentioning that be helpful and make up for the remaining amount?

Timeline

The 25k would only be available to you if he dies though. I'm not sure that would count towards income. Is he calculating before taxes and still short?

I read someone mention having a certain amount of savings to make up for a small gap but I don't know the exact details of it.

See if there would be anyone who could co sponsor just in case.

You need to find out if it's term (for a specific time period only) or whole (for the rest of his life). If it's term, then there will probably be little to no cash value. If it's whole, then the premiums he pays should result in residual cash value. If the policy will pay out $25,000 USD, then the cash value won't be $25,000. The cash value will be closer to the amount of premiums he has paid in to date.

I just supported myself on the K1. It's really only for the 90 days. You'll have to find someone to support your AOS which is the one that matters anyways.

I had read that only those working in US can show the self support. I am self employed in Pakistan, work online and make 500 - 700 dollars a month. But I am not sure if I can s how that in joint sponsorship.

Self-sponsorship depends on the embassy. It's possible in Frankfurt and London; I don't know about other countries. Obviously not connected to work, but to savings. Since you won't be allowed to work upon arriving in the US.

That isn't allowed at many embassies. As someone else said, "self-support" only is permitted for certain embassies.

Unfortunately Good Will doesn't offer any over time, well atleast in Charleston WV. He will have the pay bump in January I think but not anytime soon. He is only short .06 cents per hour. Argh

Any chance embassy will be lenient about it without savings etc?

I'd guess you'd be OK if you were at another embassy (some don't even look at the I-134 these days), but they seem pretty strict and difficult in Islamabad. Can't get a co-sponsor? You'll need one for the AOS stage since that minimum is higher than the I-134 minimum.
