Timeline

So I married May 2014 but on my taxes as single, because my accountant said I camt include her because she isnt here. Is this going to cause a problem for my wife during interview? I have lot of evidence for our marriage. But I'm worried this might cause a problem.

No, it won't be an issue during the embassy interview. My husband filed single too. We just amended it once I got here in the US.

i think you will be ok, i filed mine as married filing separately, and i had to mail them in as the spouse has no ssn. but if you have rest of the evidences you are ok.

if you are still employed, you can amend your W4 and use that as evidence, also if you have 401k or life insurance you can add your spouse as beneficiary and take that as additional evidence as well. its not required but you could if you are nervous about tax return.
