My fiance is falling only $300 short of the minimum wage limit mentioned on the 125% wage. He is doing some over time etc to make up for it. Will it count? and how can he show it in the document proof since he has already filed for this year's tax return with lesser amount showing on it.

Only if the overtime is available all the time. The employer should state so in the employer letter. Otherwise, his normal annual income is the only number they will look at. Seems that you may need a cosponsor.

I was told by someone that if he can show savings 2 times the amount that he is short, he will be ok. So if he's $300 short of the 125% he needs to show $600 in savings or assets.

I'm not 100% sure if that's true but I've seen it a couple places.

So, what if he does some contract work e.g. with labor ready and makes up for $300 and gets a letter from labor ready stating that he made this much amount along with pay stubs/invoices. Would that work?

Actually his taxes are more than $300 short for last year since he got a raise at the start of this year. He can prove that with the employer's letter plus pay stubs I guess. With his new salary he is almost $300 short.

Can you please provide me a link stating the savings part?

My apologies,The info I gave you before was incorrect. Apparently it's not 2x the amount it's either 3 times or 5 times the amount you are short. Have you looked in a joint sponsor?
