lol yesterday the loan officer finally got back to us (after i called half the branch managers to find out what was going on) to say that she had been out of call service all day. mmhmm, during office hours. sure.

today, she sends us this email:

"Just letting you both know that I am staying behind today while every else heads out to make sure I have phone service."

how kind of her! documents weren't sent to escrow yesterday as promised even though underwriter didn't come back with any conditions. she says today "for sure".:(

i am very happy (and less stressed) now that she is finally communicating with us though.

Got some crappy school news today. :( I just want to graduate and be done! At this rate it feels like this is never going to end. I'll be forty and still in school. Gerrgdhd.

At least it's warm today...

stretch, i tried the breakfast casserole with frozen hash browns recipe you linked for jonas' writing group yesterday. it was pretty good taste-wise especially for people who don't like heat/spice, next time if i'm cooking for just our family i'll add chilli flakes, loads more black and white pepper, and double the meat. one of the comments said that 10 hours in the crockpot would be too long and it would come out dry and to cook for 2.5-3 hours on high instead. that didn't work for me, it was still soggy, something closer to 4-5 hours might be more accurate.

the funeral rolls though turned out amazing. i made 24 and kept 4 back in the fridge for our lunch the day after. it was a good thing i did cos the ones i put out disappeared within the first half hour lol.

and food from jonas' birthday:

Kit that looks awesome! Makes me hungry, lol.

I just was planning to transfer my credits to a four year school this fall but none of the places in the area offer evening classes which I need because of work... And I still need two classes to get my associate's, both of which are only offered in the spring. Blargh. I turn 24 in two weeks and still don't have a degree even though I've consistently been going to school since I graduated from high school. It's just an expensive, scrappy situation.

that sucks...is there any way you could work evening shifts or somehow work your schedule around the classes?

what is funeral rolls ?

they are kings hawaiian buns sliced in half and filled with ham (or you could use shredded chicken or beef) and cheese, drenched in a sweet, tangy sauce, then baked. here's the recipe i used: http://www.stockpilingmoms.com/2014/01/funeral-rolls/

Nah, it's a government job and they only offer 8 - 4 schedules. It's too good of a job for me to quit though. Just feeling stuck. :(

I hate living in this city, it really is the pits. If anyone for any reason ever feels any attraction to York, PA please think again.
