Are we supposed to notify USCIS of my wife's new last name after we got married or do we continue using her old last name from the K-1 visa?

If your wife wants to change her name through marriage, she can. If she does choose to change it, then she will use that new married name from now on, and that is the name to use on all the future immigration forms, such as for AOS. There are places to fill in other names used, which is where the maiden name would be stated. No notification to the USCIS is needed.

~ Moved from K-1 Process to AOS from Family Based Visas - topic is AOS, past K-1 phase ~
