I was asked nothing relating to my job or my H-1B. Most of the questions I got were relating to my in-laws, i.e. had I met them, what were their names. I did take pay stubs and an employer letter with me, but my interviewer did not ask for them. Note that I didn't submit these things with my application either, my affidavit of support (I self sponsored) was only accompanied by my 2005 tax return, and nothing else.

I am contemplating on changing employers since I have an EAD. But my employer has filed H1 Extension petition as my H1 expired and I did not want to use EAD as long as I am in my current job. So, if I change employers before AOS interview, will it create any problems? I am sure that by the time of my AOS interview, my H1 petition will not be approved.

Depends on how you're meeting the criteria for the Affidavit of Support. If your USC spouse makes enough money, then it shouldn't be an issue. If you're self-sponsoring or using your wages, then changing jobs might affect your Affidavit. Honestly though, as long as you're actually employed I doubt it will make any difference.

Once you have your EAD you are not longer tied up with your employer with the H1B visa, now you are under AOS status, if you find a better opportunity somewhere you can even bounce, the advantage I would say when you file AOS your income might help since you have been working here legally.
