1. Her signature is her signature it could be an "x" for all anybody cares. There's no rule or statute as long as it's consistent on every form and document throughout the whole process. If she has a passport already make sure it's the same as on there.

2. All names ever used need to be on there

3. Not needed.

Mexicans have 2 last names. On the forms where it asks for her last name/family name/surname, then you list both last names, as that is her legal name and most likely how it is on her birth certificate and passport. Her signature is just how she signs everything normally. No need to change her signature to include all her names or any of them for that matter.

2) g-325 all other names used does that include listing her full name or put NONE? List any other names she has legally gone by. Nicknames do not need to be included here. For example, if previously married, then her maiden name or previously married name might be entered there.

Applicants employment put none or list unemployed and list dates? If she has never been employed, then you could just put 'N/A - Never employed'.

3) I -134 do i list my pension / 401k as well as my D&d policy amounts or not worry since my income is more than adequate

If your income meets the requirement, then no need to list any assets or provide proof of them. Leave that whole section blank. The I-134 is not needed with the I-129F petition though. You will need that later for the K-1 visa interview.
