I had a fabulous Monday - my class rocked last nite, came home to a delicious dinner my hubby cooked - it was lovely! Today is going to be uber busy w/ barely a lunch break to call my own  but hopefully it's a smooth run.... Have a good one everybody - it's warm & sunny here too - glad we're not having freezing weather. I can't handle Ohio or Chicago weather! Living in NY and CO was plenty "cold weather living" for me.

Ok Tuesday isn't so great. I'm still sick and I lost my voice :crying::crying::crying: .... but I can still type!

Awwww sorry to hear you're sick. I swear by this:

chickentortillasoupwb3.jpg

Mahmoud was feeling all sick Friday, sniffling and sneezing with a sore throat and slight fever. I made a big pot of chicken tortilla soup -- really loaded with chicken and calabacita and avocado and cilantro and spices. He didn't even feel like eating at all until he smelled this soup. He ate a couple of bowlsful, and he was all better by the next day.

MMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM! I think I know what I want for lunch today! Thanks MK! I love tortilla soup, its one of my favorites to make!!!! I usually put the same things as you but slightly different. In the soup I put chicken, chayote, zucchini, carrot, and potatos. On the side I will make a pot of spanish rice, its really good when you add it into the soup. Then I usually have all the toppings on the side for people to add what they like, tortilla strips, avocado, cilantro, onions, chili peppers, cheese, and lime. Definitly one of my faves!

LOL that's what so great about chicken tortilla soup -- just about everything can go into it ! I often use the same things you mentioned, depending on what's in the fridge. Gotta have the lime juice for sure, and it just wouldn't be tortilla soup without the tortillas, avocados, cilantro and cheese on top ! I throw in leftover white rice as well, if I have some around.

Hope you feel better soon !

Monday completely sucked! 3 people are quitting at my pharmacy. 1 Pharmacist and 2 Technicians. That left us with 2 techs and the Spaz owner of the pharmacy to fill somewhere around 400 scripts. It was a freakin' mad house! I got home and was sooooooooo mad and tired that I just wanted to be left alone. UGGG Thank God its over!!! I'm off today so I plan on going back to Columbia to the Arabian market since we didn't get to go there on Sunday. We went to a friend of Noors and they never stopped talking. I had to stand up and inch towards the door for them to get that we needed to go. They were still debating as we walked out the door to the car.....crazy men  .... Then again, we may not go..Noor seems to have the flu so he may not feel up to a trip...we will soon see.
