I guess I was used to waiting a long time during the K-1 visa process that I wasn't expecting anything this fast.

We just filed my wife's AOS application about 2 weeks ago and we just received the biometrics appointment letter today. Is it normal to happen this quickly or did we get lucky? What happens after this?

Yes, it is normal. After biometric, your wife will waiting for approval. Usually - not always- EAD and AP will be mailed first. If you are lucky enough, you will have an interview afterwards, depending how busy USCIS local office in your area. If you received interview waiver letter then your wife has to wait at least 6 months after received the letter. I am still waiting my I-485 approval.

Typically you will receive a biometrics appointment within a month of filing an application which requires them (I-485, I-90, I-751, N-400, etc.).
