So I got everything together, copies of everything USCIS sent me over this process. On the list for the interview it says I need a completed i-864 form which was already sent in and was received by them. Then its asking for W-2's and an employer letter verifying current rate of pay and weekly hours. Can I skip all that since they received the I-864?

They don't really ask for proof of income of co-sponsor at interview stage. But if they do, you will receive RFE there and then. It will delay your approval for sure, and I believe you don't want that.

well you don't need to redo your i864, but i brought a copy of the completed form (which i had saved on my computer) to the interview just in case. the IO i got didn't ask for the i864, but did ask to see my and my husband's paystubs which listed our then-current rates of pay. we also brought our most recently filed tax return as well as all supporting documentation for it (i.e. INT 1099's, W2's etc) and the IO took all of that. so no, i don't recommend skipping on the W2 and whatnot.

12-2013 I-131 approved (got a lawyer to expedite processing)
03-2014 Filed AR-11, I-865 for change of address
04-2014 Interview notice for Cinco de Mayo
05-2014 I-130/I-485 approved on the spot, I-551 mailed to new address within 7 calendar days
